Product Details

The Ferme d’ORée pigs are not like other pigs. Raised on pasture (when the circumstances allow), they are free to express their natural behavior, to root, to roll in the mud, and play with others. Instead of corn and soya, their diet consists mostly of barley and triticale. No antibiotics, growth factors. hormones or industrial byproducts of course. We raised Berkshire pigs for years, but now we work with a crossbreed with a very good meat quality and a better yield.

Here are two recipes to try:

Vietnamese inspired caramel pork

- 100gr brown sugar

- 1tbsp water

- 2 lb pork shoulder in pieces or 2 lb pork belly in cubes

- 1.5 cups coconut milk

- 1 shallot sliced thinly

- 2 garlic cloves minced

- 1.5 tbsp fish sauce

- ¼ tsp white pepper

-sliced red chilli

-cilantro chopped

Place sugar and water in a large pot over medium heat. Stir until sugar is melted and bubbling then add all the rest of the ingredients except for the chilli and cilantro. Stir and adjust heat to simmer energetically. Simmer for 90 minutes uncovered. Stir a few times while cooking. When liquid has reduced and pork is tender, fat will separate- stir and pork will brown and caramelise in fat. Once liquid is stuck on pork pieces, it is ready! Serve with rice and garnish with red chili slices and cilantro.

Stuffed acorn squash with slow cooker pulled pork

Serves 4

2 lb pork roast

1 tbsp olive oil

1 onion, diced

2 tbsp fresh ginger

1 C beef broth

1 star anis

¼ C soya sauce

¼ C rice vinegar

2 tbsp peanut butter

¼ T hoisin sauce

1 tsp sambal oelek

1 C carrots julienned

4 celery stalks julienned

Salt and pepper

4 C baby spinach

¼ C frech cilantro chopped

4 small acorn squashes

Cut the roast into 4 pieces. In a hot pan with olive oil, brown the pieces of roast. Add onion and ginger and deglaze with broth. Transfer to slow-cooker. Add rest of ingredients (except spinach, cilantro and squash!) and cook for 8 hours on low or 6 hours on max. Add spinach and cilantro at end of cooking time. Incorporate so the spinach wilts. Using forks, pull the pork and remove bone. Add salt and pepper to taste. Cut squash in two and remove seeds with spoon. Cover with plastic wrap and microwave for 8 minutes each or until soft. Stuff squash with ulled pork mix and serve.
